X'Mas Delights

Carmel Cake
4 oz.butter
1/4 teaspoon salt            
1 cup sugar          
1/2 cup milk
1 egg    
1/2 teaspoon vanilla
1 egg-yolk, extra  
1/2 cup thick carmel
1 cup plain flour Sauce
1/2 cup self-raisingflour
flour Pinch bicarbonate soda
cake

Cream butter and sugar until light and fluffy. Add egg and egg-yolk, beat well. Sift flours and salt, add to creamed mixture alternately with combined milk and vanila. Spoon 2/3 of mixture into greased 8 in. baba tin or ring tin. Blend carmel sauce and bicarbonate of soda into remaining cake mixture. spoon over mixture in tin, do not mix. Bake in moderately hot oven 30 to 40 minutes or until cooked when tested with a skewer. Cool in tin. When cold, ice with carmel icing.

Note : The thick carmel sauce which is sold in cartons is best for this cake.

Chocolate Marble Cake

4. oz. butter
1/2 cup milk
3/4 cup castor sugar
1/4 cup brown sugar
2 teaspoons grated chocolate
2 cups self-raising flour
Lemon rind 1 tablespoon cocoa
1 teaspoon vanilla
1 tablespoon sweet
2. eggs sherry

Place milk brown sugar into saucepan, stir over low heat until sugar dissolves; remove from heat, allow to become cold. Cream butter, castor sugar, lemon rind and vanilla until light and fluffy. Add eggs one at a time, beating well after each addition, Fold in sifted flour and milk mixture alternately.

Place half of cake mixture in another bowl. Add sifted cocoa and sherry to one bowl ; mix lighly. Leave other half of cake mixture plain. Spread half of the plain cake mixture into greased and greased paper lined deep 8 in. cake tin. Spread half of the chocolate mixture, then repeat with plain and chocolate layers. Bake in moderate oven for 55 to 60 minutes. When quite cold, top with chocolate glace icing.

 Viennese Coffee Cake

1 2/3 cups plain flour
6 oz. butter
1 cup self-raising flour
1 cup sugar
1 teaspoon 2 eggs
bicarbonate of soda
Pinch bicarbonate soda 1 cup buttermilk or sour milk
pinch salt

Topping

2 oz. butter 2 tablespoons cinnamon
2 tablespoons
1/2 cup plain flour brown sugar
 

Sift together flours, salt, and bicarbonate of soda. Cream butter and sugar . Add eggs one at a time, beating well. Add flour mixture alternately with buttermilk.

Pour into greased deep 9 in. square cake tin; spread evenly.

Topping

Cream butter. Beat in brown sugar , cinnamon, and sifted flour. Press through sieve evenely over mixture in tin. Bake in moderate oven for 55 minutes, or until cooked when tested with skewer.

Orange Loaf Cake

1/2 cup castor sugar
2 eggs
1/2 cup milk
2 cups self-raising flour
4. oz. butter
2. teaspoons grated orange rind

Combine sugar and 1/4 cup of milk in a small mixing bowl. Add softened butter and orange rind mix cream well. And beaten eggs a little at a time. Sift flour, fold in alternately with remaining milk. Spoon mixute itno greased 9 in, x 5 n. Loaf tin lined with greased paper.Bake in moderate oven  for 40 minutes.

Milk Cake

Flour 220 gram
Eggs 3
Butter 120 gram
Sugar 220 gram
Milk 3/4 of a cup
Vanilla essence 1 tea spoon
Baking powder 1 tea spoon
grated nutmeg

Method

Cream butter and sugar then add eggs. When light and foamy add the sieved flour mixed with baking powder. Add milk, essence and mix well. Pour it into a well greased 2 lb. tin and bake (temperature 450 degree ) .
